Level 1 Introduction to Professional Cookery
Course content & format
The course is structured to build a solid foundation in craft skills in the catering industry. The building blocks for this industry are embedded within our state of the art Practice and Production kitchens.
Developing your culinary knowledge is our goal, whilst building those key employability and industry skills this also runs alongside our online portfolios.
Visits to International and local Restaurants and Catering establishments. Opportunities for learners to be involved in internal and national culinary competitions. Taking part in in-depth live demonstrations including regular updates in culinary trends.
You will gain valuable practical experience working within our Restaurant@T1 which is open to the public. Within your first year you will complete work experience with local restaurant establishments.
Reliability, attendance and punctuality are very important. A neat, hygienic and professional image is essential as you will be working in the hospitality Industry.

Entry qualifications
Learners must have;
To qualify for entry onto this course you have to be 16-19 with a grade 3 or above in English and Maths, be available for a full weekly timetable and be prepared to work at professional standards. You will also be invited to an interview to assess your interest, aptitude and suitability to the course.
Professional Chef whites will have to be purchased through our supplier Russums catering equipment / Clothing suppliers (order guidance given)
How is this course assessed?
You will be introduced to employability in the catering and hospitality, food safety, Health and safety awareness, healthier foods and special diets, kitchen equipment, preparing and cooking food using classic methods; boiling, poaching and steaming. Stewing and braising. Baking, roasting and grilling. Deep and shallow frying. Regeneration of pre-prepared food. Cold food preparation and the Synoptic craft assessments. Core skills such as communication, numeracy, literacy and professional standards.
What can I do next?
? Once you have successfully completed this course, you will then be able to progress on to the level 2 Diploma in Professional Cookery and Level 2 Food and Beverage Service which are also at our T1 Campus.

● Catering whites will need to be purchased, to a specific standard and style (guidance given)
